Our acorn-fed 100% Iberian ham comes from 100% Iberian breed pigs rised in freedom in holm oak pastures and fed on acorns during the ‘montanera’ season, completing this diet with grass and other fruits of the ground.
The 'montanera' is the period between October and March approximately, on which the ripening of the acorn and the final phase of the Iberian pig's rearing take place. During this period, the animal puts on a lot of weight and that is why, once this phase is over, it is slaughtered.
It is in our ham factory in Salamanca where we carry out the complete process of manufacturing and selling of all our hams. Cured in the traditional way in natural drying sheds, this process is controlled at all times and throughout the curing period.
