Our acorn-fed Iberian shoulder ham comes from 100% Iberian breed pigs rised in freedom in holm oak pastures and fed on acorns during the ‘montanera’ season, grass and other fruits of the ground.
The 'montanera' is the period between October and March approximately, on which the ripening of the acorn and the final phase of the Iberian pig's rearing take place. During this period, the animal puts on a lot of weight and that is why, once this phase is over, it is slaughtered.
In our ham factory in Salamanca, we carry out the complete process of manufacturing and selling acorn-fed 100% Iberian shoulder hams, with approximately 24 months in natural drying rooms. This curing process is always being controlled throughout this time.
